Got the new Apple Watch S10 last night and the new iPhone 16 pro. Went to turn on the sleep apnea detection and didn’t see the option for it. Rebooted both the phone and watch and still no luck.

I'm happy to report that I had this exact issue and fixed it. I upgraded from a Watch 6 to a Watch 10 today. I paired the 10 and then had this issue. I decided to try un-pairing both watches and then re-pairing the 10. This fixed it.
It is available in Canada but there is no option to set up. unpaired and paired and both watch 10 and iphone 15 up to date. I bought this watch for this reason. Disappointing.
