Iphone was stolen and i fell for the phishing link. They manage to start the remove device in find my. Now it is waiting for thirty days to completely remove the device. Can i still undo this? Am i still able to remotely erase the data?

If you can still log in, you should be able to cancel the removal request from Find My.
You do NOT want to remove the phone from Find My. If you do, that will allow whoever has the phone to erase it and sell it as a used phone.

The bad guys have probably already changed the password to keep you from getting back in.
