Apple Watch will not automatically detect a walking workout

I recently purchased a new Apple Watch SE 2nd Gen and was under the impression it would automatically detect workouts such as walking, running, etc. As a previous Fitbit customer this is important to me as my Fitbit had no problem automatically detecting workouts for 4+ years. I have gone ahead and done everything suggested in articles such as:

but it does not seem to fix the issue. Do I just not have enough workouts logged for it to auto detect? I have had the watch only a few days. Thanks for any help everyone!
