In apps that allow keyboard input, like Mail or Messages, I see no keyboard to enter text and find no way to open one; tapping the microphone icon doesn’t switch to “keyboard” either.

Do you get the option to scribble your text input and you see this screen on your watch when trying to type?
Tap on the scribble icon in the right corner to get back to the icons for all input options:
After that tap on the keyboard icon to bring up the keyboard.
And the watch should remember your input method for the next time.

then the first (and simplest) thing to try if something isn’t working right is to restart your Apple Watch and its paired iPhone. If necessary (device not responding), try a forced restart. Both methods can be found here:

If that doesn't help, the next steps would be to unpair and pair your watch again and restore from the backup just created. This should result in no loss of data. It deletes all temp and corrupted files and re-indexes the file system.
