Will I lose my apps if I sign out of my Apple Account?
If I sign out of my Apple ID on my iPhone 14 Plus device, and sign into my Apple id on new iPhone 15+ device will I lose apps, purchased mp3s and data

In general no, as long as you use the same Apple Account. If an app is no longer available on the store it will not be redownloaded. Some things such as mp3s may have to be synced again from the source computer unless you subscribe to Apple Music.
