Can I sign out of my Apple TV account remotely?

Your Apple Account name (email) would still be visible this way, so it is better to sign out yourself on the device, which would remove the account.

It should be okay, I am assuming what you mean is the hotel offers Apple TV + app however you need to sign into your own account. Most hotels that offer similar services will clean the account's login info off when a guest leaves. Check with the hotel's IT staff to see if they do something similar.

By the way, you cannot log out remotely. However you can change your login password.
