I’m upgrading to an iPhone 16 pro here in the UK shortly and going to the USA in 2/3 weeks time.
my question is:
can I use an American eSIM in conjunction with my current UK nano sim?

You should be able to as long as your iPhone is not carrier locked. Check with your carrier to make sure you can add a US eSim when you're in the US. If your iPhone is carrier locked, they likely offer roaming, which you can pay for on a daily basis.
I have no clue what giff gaff is, but if the phone says in Settings > General > About > Carrier Lock - No SIM restrictions, you should have no issue using an eSim in the US.
If you are visiting, how long will you be in the U.S.? The reason that we ask is that most U.S. carriers are looking for a long term commitment with new service and short term plans may or may not be available.
If short term plans are available, they tend to be very expensive, so if your U.K. carrier offers an international plan option, that may be a better choice.
Unfortunately, things are rarely ever as simple as they appear to be or should be.
