Hi. Is there a way to set a default app for Apple TV (device) to launch upon startup? For example, I'd like to launch Apple TV and automatically have the YouTube TV app open.

That is currently not supported.
However, you can set the Apple TV box to sleep (through Control Center) with the wanted app still open, then that app will also be front and ready when woken from sleep mode.

Another option is to create a shortcut using the ‘Open App on Apple TV’ option. When you run this shortcut it’ll turn the your TV on and open the specified app in one step. You can even run it by saying “Hey Siri [name of shortcut]’. So if you name the shortcut ‘start TV’ you would say ‘Hey Siri start TV’.
