When getting a new iPhone, there are things which can cause this:

Is there an Audi CarPlay firmware update for your audio system that the dealer may have overlooked?
Is there any other Bluetooth device paired with your Audi such as another iPhone or Android device? If there is, the iPhone will not pair with the Audi until the other device is unpaired. You have probably done so, but in case you haven't, review the Audi manual for Bluetooth pairing instructions.
I did all of those things. I brought the car into the Audi dealership. They were also unable to connect wirelessly. I AM able to connect using a USB-C cable. The dealer believes there is a bug in the new Apple system.
So, I removed ( I think) any previous device.
In Bluetooth, my phone ‘shows’ connected to the Audi. The Audi ‘shows’ my phone on its list of devices. They just don’t ‘talk’ to each other.
I will ask Audi about a firmware update.
