I’m trying to look back at some old memories I have on my iPhone 8+ and a pop up shows saying i need to log into iCloud so I clicked to log in but then it says I can’t log in because the device needs to be updated. Okay go to update and it won’t update because it needs to be signed in. What do I do to get around this ??

If you are not the owner and do not have the Apple ID and Password then there is no way that you can get into this iPhone unless the original owner shares the Apple ID and password with you. If you are lucky you can get into this iPhone if they (owner) accidentally remove the device from their Apple ID.
