Keyboard layout error when using shift key for symbols
When I press SHIFT+2 instead of getting the @ symbol like i should i get the quotation symbol ( " ).

Go to system settings > keyboard > text input > edit > all input sources and use the minus button at the bottom to make sure there is only one item on the list, and that the name of that item is US or ABC.

For older macOS versions, it’s system preferences / keyboard / input sources
Sounds like you somehow switched the keyboard layout from United States to United Kingdom. With UK layout, shift + 2 key gives you quotation marks instead of the @ symbol.
