You asked about the best way to charge your phone. It is recommended to plug your phone in to charge when you go to bed at night, connected to Wifi, with Optimized Battery Charging enabled in Settings > Battery > Battery Health. Your phone cannot overcharge. You'll wake to a fully charged phone. Your phone will backup while you sleep as long as you have automatic backup to iCloud turned on, so you can never lose more than a few hours worth of data, should something unfortunate happen. That is the BEST way to charge your phone.

In my experience yes. If my iPhone is not plugged in at night I typically lose 2 to 4%. If my iOS was recently updated I might lose 8 to 10% each night. A lot of syncing, updating and behind the scenes maintenance is done at night. Nothing unusual there.
