It's not on the list of countries in which that feature is available:
AirPods Pro 2 - Hearing Health Feature Availability - Apple
When it will appear none of us here, who are all just fellow users, can say.
Regards.

Apple does not disclose fixed timelines for implementation of features and services. The person you spoke to at a support level literally had no idea. Those that do know (way above tier 1 support team members) have all signed Nondisclosure Agreements and are not risking their jobs.
Basically, it’ll be released when all legal hurdles are cleared and Apple fells the market is ready.

If you ring up Apple support they can’t tell you when the update will occur to a support hearing aids. They just direct you to the Apple website which tells you nothing. Somebody at Apple knows but they’re not telling their support people.
Apple rarely if ever releases dates features may be released in the future. Not even to their support or store staff.

Approved or required by the Australian Government? I can't find anything from Apple or honestly anywhere, where the Australian Government has mandated hearing tests from cell phone manufacturers.
I got a reply from the Goods and Administration Authority that said it had been approved last November and to put my request to Apple. Which I did and just got "stonewalled".

I would like to know if the Community Moderator for this thread could provide a date or at least a link to a page that would help us Aussies know how long before Hearing Health is released?
They wouldn't know but they wouldn't be permitted to post anything about future releases even if they did know.
Those that truly know have signed NDA’s (Nondisclosure Agreement) and they’re not risking their jobs to leak information. The others will find out shortly before the product or service releases.

How recently was it approved in Australia? Apple may not have had time to implement any mandated changes or restrictions.
