Unfortunately, it looks like the latest official YouTube app requires iOS 15.0 or later, so using it on the iPhone 6 is not going to be possible.
If you had an iPhone 6s or iPhone 6s Plus, it should work, though (those models can be updated to iOS 15.8.3).
If your phone is running iOS 12.5.7, it can not be an iPhone 6S. Instead, it has to be an iPhone 5S, 6 or 6 Plus. Neither can be updated beyond 12.5.7.
