As for the Mail app you do know don't you that you can turn off the new options like categorizing and the category icons next to emails. You can also return to traditional list view if so desired.

It has never been possible to downgrade updates.
If there is something specific with Mail that you would like to discuss, free free to include that information. Most users have complained about not liking the Categories option found in other email clients as well, but that can easily be turned off so you have the normal list view like before.

No, I don’t.
I know I can hit the three dots and change it to list. I do not know how to uncategorize everything
I want to completely remove the categories and I cannot find how to do that
As the link provided by Mac Jim ID shows, select list view from ⋯⃝ menu. That turns off categories. If you also want to get rid of the icons on the left then
Settings->Apps->Mail->scroll down to Show Contact Photos and turn it off. Now you will just have the list of emails and nothing more.
To say the new mail update sucks would be an understatement. I do not need Apple's help to determine what category my emails are. If they want to fix something, fix the contact app. It has always sucked. The mail actually was pretty good.
Why can't I preview updates and then update only the apps I want?
If an app update is available, you will be notified by the App Store app and you can choose to update or not do so.
You also have the option to not update the iOS version if you wish, but updates almost always include important security fixes.
No duh! A novice is aware of this, and the comment is not helpful. I want the security updates and some of the other updates, just not all of them. I would also like the option of which apps I update after previewing them.
