Bought a series on Apple TV, video page shows that the original audio is available but I can’t change it, only plays in the English dub. Can’t change it in settings either. Can’t even find a different version with only the original audio so I can’t even try purchasing that version.

The line about Original Audio is about how the show was made originally. That doesn’t mean that those languages are included in the stream, unless they are also mentioned under Audio. Some shows might be available as dubbed-only.
If the show as offered isn’t practically useful to you, then you may request a refund. Don’t wait too long, as refunds may get denied after a certain period, due to elapsed time. Request a refund for apps or content that you bought from Apple - Apple Support
