Hi there, I got my partner a MacBook Air 2017 and she can’t open Microsoft office it’s not letting her, is there a way to update the iOS and try to open it?

What version of office? The 2017 MacBook Air can not run any version of macOS later than Monterey, 12.7.6.
Microsoft no longer supports that version of macOS.
If you have a Microsoft 365 subscription, you should be able to use the web based MS Office apps.
