How do I block specific websites in Safari on iPhone?

How do I leave safari mostly unrestricted but block specific sites so they don’t pop up even accidentally.

Go to Settings ➜ Screen Time ➜ Content & Privacy Restrictions ➜ App Store, Media, Web & Games ➜ Web Content and adjust as necessary there.

If you select Limit Adult Websites you can further specify other sites that may not be classified as adult that you want to limit or sites that may be classified as adult that you want to allow.
