My ipad cover has a slot for storing a pencil immediately to the left of the ipad. If I buy an Apple USB-C pencil, will it go into sleep mode if placed in the slot?

It will go into sleep mode if placed on the magnetic strip on the iPad or Bluetooth is turned off on the iPad.
Otherwise, it may go into low power mode if its stops sensing movement, but any jostling or shake can wake up and cause it to use a bit more power.
Also note, the iPad Air 2 in your device line is not compatible with any Apple Pencil.
