I restored my iPhone 13 twice In error while trying to retrieve data, I didn’t even know that was possible, and it appears an older version was updated can I retrieve information from an earlier backup still?
The information I was trying to retrieve was one back up, but it seems to have done two.

Not for this instance, because there is only one backup that is updated incrementally, but for the future if you back up to a Mac you can “archive” backups, which will start a completely new backup the next time.
Also, iCloud saves the two most recent backups.
