All of my devices have been taken over by my tech husband soon to be X, but I need to learn how he is doing it. My galaxies to my iPhone has all been infected with malware. I seen a note on his desk that said to phish my phone. He has to write himself notes to remember. He is driving me crazy for real for real need help please

Unless he's had physical access to your iPhone, there is no way to install malware on it remotely.
Phishing applies to people not devices. Phishing is the act of scamming or engineering someone to give out their credentials.
Unless you've done that, he has not actually done anything to your iPhone.
I'm pretty sure it's more of a psychological tactic than any real action on his part.
