The title and original question specifies iPhone, and your text here specifies iMac, so I'm not sure which (or both?) is involved here.
If the photos or documents were deleted locally and then either deleted again from the recently-deleted, or if the photos or documents aged out of the recently-deleted storage, there is no path to recover the deleted items.
You will need to have made backups of the locally-stored photos or locally-stored documents prior to the deletion. On a Mac, that can include Time Machine backups.
If you want folks here to look at the Mac configuration and its performance, please download and run (free) EtreCheck, and when the run completes share the report to the clipboard. Then open a new reply here, and press the additional-text button that looks like a printed page to get a text input box big enough to paste the hardware and software configuration report here, and paste and post that report here.
Depends where you deleted them from. If they were in iCloud then they will stay in the Deleted folder for 30 days and you can get them back from there. Give us a bit more detail - what did you delete, how did you delete and where from.
