I need to enter my Apple ID in the Apple Watch SE but the scribble doesn’t recognise my @ or numbers. How can I do this? Ultimately I’m trying to reset the watch as I’m going to sell it.

Make sure that on your iPhone in Settings/Notifications/Apple Watch keyboard is enabled.
Then bring your iPhone near the Apple Watch. When the watch asks for the Apple Account password, you should get a message on your iPhone, asking, if you want to use the iOS keyboard to type the password and send it to the Apple Watch.
And, just to make sure that you do not miss one of the needed steps:
