How to update apps on iPhone 8 Plus without iCloud password?

I bought this iPhone eight plus from a friend and anytime I want to update the apps they say I have to enter the persons iCloud password before but I don’t know and he also can’t remember it.

You can't. Apps are always linked to the Apple ID that downloaded them. All you can do is delete them.

Were you able to sign in with your Apple ID? It is apparent that the device had not been properly reset before you bought the phone as those apps would no longer be there. If another Apple ID is signed into the device, then it will always be locked to that account holder and you will not be able to remove it without the password.
