Text in notes not saving (disappearing or reverting back) iPhone 16 Pro

I just recently noticed in the last few days that some text I type into my notes disappears or goes back to what it was before I typed something new. This is about specific text in the notes, not the whole note itself.

For example, I have a note that I've had for years that has a bunch of things for me to remember to do for the week/ month, etc. I usually add text to the top of the note and it's fine, but when I added something lower in the note and closed out of the app and later went back on it, the text wasn't there, or if I changed a word and went back to it the old word was still there instead. This also happened on a completely different note too.

It sometimes happens and sometimes doesn't. I am not doing anything differently than I ever have before, I am just simply typing in a note or changing the text. I am not shaking the phone to undo anything and my phone is completely updated. I had notes sync to iCloud on and turned it off and it still happened. The notes are "On my iPhone". If I type something new, the time updates to the time I'm typing, and even if the text disappeared, the time still says the new time. This has happened on wifi and data, and I have turned off and on the phone.

This is extremely frustrating because now I have no idea if I have typed things and they disappeared and I forgot about them. I use notes for my job every day. Has anyone else noticed this, what could be causing it, and how do I fix it? I saw that deleting the notes app and reinstalling it might help, but my notes are only saved on my phone and not iCloud so I don't want to risk all my notes being gone forever.
