Every month, money is deducted for an unknown purchase from Apple Shop. The money is withdrawn weekly, but I do not receive any invoices and do not know what I am paying for. How can I cancel the payment?

Any subscriptions related to your Apple Account or the App Store can be viewed on your phone -> Settings -> iCloud -> Purchases and Subscriptions, along with options to cancel subscriptions you no longer need/want.

Mobile Phone billing is only an option in some regions with some cell providers and you would have to choose that method for purchases if it was available. You can see those here:

Have you verified if the charge is not due to an iCloud+ plan? Those can be downgraded to the free plan and may not appear as a subscription charge.

Apple charges should appear as apple.com/bill. You can review your purchases, subscriptions, and billing details at support.apple.com/billing.
Contact your mobile provider. I have not seen a legitimate Apple charge with the description as Apple Shop.
I recommend calling Apple directly for any additional direction on how to proceed. My region does not support mobile billing so I do not have any information about that process. I don't know if there are other members on your plan that would have the capability to bill to the provider or if it is actually a fraudulent charge. I also am not familiar with disputing fraudulent charges on a cell provider if that is the case. In the US, we have the FTC that regulates the cell phone carriers and I am sure there would be a local government authority you could also turn to if needed. Please keep us updated on what you are able to find out.
