My son gave me an iphone 11 for my birthday. I created a new apple id and and started setting my new phone up. The next day my ex boyfriend stole my new phone and changed the apple id and wont tell me what it is. He thought he was being funny! So how can I reset my iphone 11 to where I can start all over as if my phone was brand new?

The iPhone is now set up as his property. In order for him to have done this, he must have had access to your Apple Account username and password. You would need access to his Apple Account username and password to reclaim it.

Without that information, the only way to possibly regain access to the iPhone is to seek assistance from the law enforcement authorities

He don’t have an apple account he factory reset my iPhone and just changed the iCloud account name (which is still my name) but he changed it by adding a number to it or something and now i don’t know how to get into it!
You did not state anything that changes my response above.
The email had only a couple of numbers added to the end of the email! It’s still in my name I just don’t know what he changed it too
