I did NOT restore on initial set up and now can’t seem to figure out how to download all my info from my old iPhone to my new iPhone. I tried doing a reset and erase all data, however, new iPhone comes up automatically like I’ve already set it up.

If you already set up the iPhone and are past the Quick Start manual, you can try to manually migrate information over.
If you have iCloud, you can first back up your old iPhone. Then on your new iPhone, you can restore that copy. This article has more detailed instructions for this:

If you don't want to use iCloud, you can try a wired connection. You will need a cable that can connect the two devices. See this article:
