Apple Watch mic not working , no keyboard no dictation
Dictation speech to text has stopped. No keyboard either , msg come up on iPhone to text on phone instead of watch

Did you try to force restart the watch by pressing and holding the Digital Crown and the Side button together for about 10sec, until the Apple logo comes back again?
If this does not work, unpairing the watch would be the next step:
