Thanks for replying. I see the button in the top left corner of the screen if the Call Recording function is enabled. It doesn’t appear if Call Recording is disabled. Which gets my original question, why would Call Recording be defaulted to on? The screen UI has a button visible and can be pressed by mistake or by error and record a conversation without the other party knowing. Plus this would then create an audio file db that can be potentially mined by Apple. Seems like a weak privacy shield. Would you agree?
If you happen to accidentally tap the Call Recording feature, it will start a 3 second countdown which you can cancel before it notifies the recipient on the call they are being recorded. It is transparent and calls cannot be recorded without the other person knowing. Secondly, your recorded calls stay on your device and are not shared with Apple. Regarding why it was defaulted to on, we don’t know. But Apple tends to do that with new features to make it more known.
When you place a call, there is a button to start call recording, but it isn't defaulted to on. You HAVE to tap the button to initiate call recording and whoever you are speaking with will then be told the call will be recorded. If you aren't tapping the button, nor are people being told the call is being recorded, it is NOT defaulted to on. It's just there and accessible.

Thanks for the replying. Any data these days feeds a LLM. But here’s where the creepiness comes in. I had my wife call me (with Call Recording on) and button pressed. I answered (with Call Recording off). We had a 5 minute conversation. She did not turn off call recording. Your speech-text function fired off and a text and audio file were found in Notes on her phone. But, I never saw any notification that the call was being recorded on the other end from when I answered the call to termination. That’s a whole other issue here. How do I fix this?

Well when someone starts call recording, both users hear the three second countdown then an announcement stating the call is being recorded. Perhaps you didn’t hear it or your volume was too low.
