How to use Scribble on iPad mini for handwritten notes?

I've been wanting to get an iPad and a pencil so I can handwrite patients' notes without using a keyboard.

Well, I thought Scribble could solve the need. However, it seems to keep creating a new text box each time I write, and most of the time, a sentence is broken into multiple parts. Is there a trick to the write-to-text feature that I'm having no luck with and am disappointed with?


I like using Notes in the past because it can be sorted into files and folders. It's also easy to access with any Apple product. Now, with the iPad mini 7 and Pencil Pro, they seem nice at first, but I feel like they're a bunch of made-up products that serve no purpose. I still find it much easier to type. I don't want to do that anymore; that was the whole purpose of buying new technology. How dump I feel when iPad mini 4 can do the same, typing (face palm).
