That question was marked as closed, so I’ve posted this as a self-answered question based on my own one-off fix. Hope that is in order….
This applies to a Mitsubishi Outlander PHEV 2019 infotainment unit, but the symptoms are exactly the same as for the original question, which I think refers to a later iteration of that unit. I use a wired connection via the USB port to connect my iPhone.
I had already gone through the procedure of forgetting the CarPlay connection on the iPhone and making sure CarPlay was enabled when locked plus disabling screen restrictions.
When you are confronted with the prompt shown below *each time you reconnect your iPhone*, instead of choosing the obvious right hand button to ‘Always Enable’, choose the left hand button to ‘Cancel’.
This led me to a following prompt (not shown, as this was a one-off and I don’t want to mess things up again); this second prompt allowed me to choose to register the iPhone *without* enabling CarPlay.
I then unplugged the iPhone, then plugged it in again; this caused the iPhone to appear correctly in the list of registered devices accessible from the infotainment top-level menus.
From there, I was able to re-enable CarPlay on the registered device entry; once I did this, unplugging and plugging the iPhone again restored the automatic CarPlay connection.
I’ve tried reconnecting it a few times, switching the car power off and exiting the vehicle, so far it is still working correctly.
