I've got an old Apple ID what was a set up using gmail, is it possible to make a new Apple ID using me.com without losing all my stuff i.e. picture, contacts?

Creating a new Apple Account (formerly called Apple ID) implies a new person is involved. Data generally doesn’t transfer from one Apple Account to another.
What you should do instead is change your Apple Account’s email address.

They don't do me.com or mac.com domains anymore. All new email addresses have to be icloud.com. If you had one from back in the day, you can keep it but no new ones with those domains are being issued anymore.
