My wife has just bought a watch series 8, chosen because she has iPhone 8 and this page on the Apple Support website says watch series 9 would not be compatible while series 8 is

However, the watch insists on iOS 18 and the phone says it cannot pair with the watch.

Is it possible to revert the version of watchOS?
I have an iPhone 11 so, long short I realise, I wonder would it be possible to pair the watch with my phone, revert to an earlier version of watchOS, then unpair from my phone and pair it with my wife's iPhone 8?
The information in that article only applies to watches running their original watchOS versions; it's not possible to pair one on 10 or above with an iPhone 8.
