Cycling workout on Apple Watch not showing on Activity ring

Opened a cycling workout and did over an hour, 7 miles mostly off-road with moderate exertion. Doesn't show on exercise ring at all. Band was tight, no tattoo. Definitely had the heart pumping, and yet doesn't show on the exercise activity ring. Any ideas? Does the cycling exercise care if you're off-roading (slower than touring on-road biking)? Is it expecting more?

I'll add it manually but then what's the point? Thanks in advance!

Yes and yes. I was wondering if the workout doesn’t register if it thinks you’re not exerting yourself enough. There’s different kinds of cycling and I may do half the speed if I’m on a hybrid doing dirt as opposed to being on a touring bike on wide open roads. But I definitely got a workout and it’s aggravating for it not log it as exercise or to close the rings.
