In the last six months, there has been a problem with Bluetooth. Bad pairing with the car, glitchy pairing with headphones, voice messages in Telegram are recorded on the 7th time.

What model iPhone, and how old is it?
Another possibility: are you near an airport or military base? These facilities use C Band radar, which is the same frequency range used by Bluetooth and can cause interference.
