How do I turn off notifications in Sleep mode on Apple Watch Series 6?

Hi there. Over the last few weeks I’ve started to get notifications coming through on my Apple Watch 6 when in sleep mode. I didn’t change any settings, haven’t done anything any different. Both my phone and watch are on the latest updates. Over the last couple of weeks I’ve turned off the watch and iPhone (15), unpaired the watch from my phone and re-paired choosing not to use backup, ie pair as if from new. I’m still getting certain notifications coming through which are waking me up. It’s meant I’m no longer wearing the watch to bed, therefore no longer able to track sleep which is incredibly disappointing. Can anybody help get this sorted, please? Thanking you in anticipation.
