I want to create a second text message with the same person and name it to keep details of a topic separate from our ongoing thread in order to be able to quickly find relevant details on a single topic.

Hello!
You can’t do that in iPhone text messages. Use the Notes app, (via a Shared Note) which is perfect for what you’re tying to do. You both type in the Note and both your guy’s typing, edits, etc. will be synced to the other person’s device, almost in real time.
If that doesn’t work for you, consider looking for a third party app which meets your needs.
