Nothing I do will create a tag. Is there something I need to change in Settings?
For example, I'm using #tag hitting return, and nothing happens.

Yes. On iOS 18.5, for tags to work at all, I have to set this to ON:
Settings > Apps > Notes > Auto Convert to Tag = ON

Well, apparently, the problem is notes with tags cannot be locked. I found that out the hard way. There is nothing easy about using Apple products. I have to say there is nothing intuitive about these products.
I just learned I can add tags to a brand new note that has nothing else in it. But I cannot add new tags to existing notes.
This is definitely a case of “it just DOESN’T work“.
Well, I just tried that, and it didn’t work. But thanks anyway.
