iPhone 15 Plus pauses charging at 80% due to temperature, then resumes slowly

When your iPhone pauses charge it is entirely normal as your iPhone has gone beyond its normal operating temperature, which evidently happens when charging as it has to exert more heat. This helps your battery's longevity as heat can further exacerbate battery aging. There is nothing you need to do about this message.

This is a new feature and COMPLETELY normal and not cause for concern. If you are using at least a 20w charger, which is fast charging, your phone will charge quickly to 80% and then a message will be displayed that pausing is on hold until the phone cools down. This is something we all see now.

That could be a factor. It also can be unpredictable, if your iPhone is charging from a low amount, it will definitely speed up charging and cause more heat exertion and this message. If it is close to 100%, it will slow charging and you may not even see the message at all.

Have you tried to force restart the iPhone to see if the issues persist?

1. Press and quickly release the volume up button.
2. Press and quickly release the volume down button.
3. Press and hold the side button.
4. When the Apple logo appears, release the side button.

You may not see it every time you charge your phone. But when you do see it, it is NOT cause for concern, that's the main point. Your phone is doing what it was designed to do, so worrying over a normal feature is a waste of worry.
