My Apple Watch cardio fitness stopped updating as of May 19th, 2025

My Apple Watch 7 was working fine with the cardio fitness being updated daily until May 19th. Nothing changed. I checked all the settings, privacy, motion tracking on both watch and iPhone are all setup correctly. All my vitals, heart rate, etc. Physical activities and workout times are all being recorded, just not the cardio fitness. Obviously I can add the data manually into the health app based on historical trend but that's not the point, the watch should work.

The Apple support team couldn't figure it out. The technician on the phone sent me to the Genius Bar to verify my hardware and everything (sensors etc) is working. The Genius Bar person said that since it is health related, they can't do much instead they send me back to online support and they couldn't figure it out either, short of telling me to get the latest watch but with the new watch, will it happen again?

Any other suggestions?

In addition to the excellent question by IdrisSeabright about using the default Workout types, can you see those workouts as data in your Health App -> Cardio Fitness -> Show All Data, or under -> Data Sources & Access?

You should see your current used watch as a source and a current date, when the device submitted the data via the workout you started.
