Let’s first make sure that your underlying Apple Account data is “as you desire.”

From a “desktop” browser (a desktop browser gives IMO the most complete and easily navigated display) …

Go thru all the tabs and ensure that EVERYTHING there is correct.

Pay special attention to your listed devices. (These are devices which can access your account … although it doesn't necessarily mean that they currently are active.)

Clean-up (delete) any you devices don’t recognize. (old, long-disused devices tend to “accumulate” here)

Once you’re satisfied, we can focus on any individual device mis-matches.

Yes, on all Apple devices the Settings -> General -> About -> Name can be changed to anything you’d prefer to allow you to better identify it.

These names will be displayed in your Apple Account “devices” listings; while on your iPhone it will additionally be publicly broadcast as your Hotspot’s SSID. (when Hotspot is “on”)

Important Assumption: All of your devices are signed-in and using the same Apple Account. Correct ???

So then, where exactly — in which app(s) — and on which device(s) — is your name NOT displaying as-desired?
