Is there a way to save routes on Apple Maps?

How would you like to save the route? For offline use, or for ease of use?
If you want to save it for offline, you can download an Offline Map including the route which will allow you to get directions within without a connection.
If you want to save it for ease of use, the coming iOS 26 actually announced a feature for that. It's called Preferred Routes, which learns from routes you take often.
