Tap Settings > General > Software Update > Automatic Updates

Move the sliders under AUTOMATICALLY INSTALL and AUTOMATICALLY DOWNLOAD to turn off the things that you don't want to happen automatically.

Simply reject any updates offered. Go to Settings/General/Software Updates and make sure you have not enabled Auto for installing updates.
