How do I set up iPhone Mirroring with new phone?

I recently replaced my iPhone and am unable to set up mirroring on my MacBook Air. Both devices are up-to-date on their software. Every previous discussion on this issue points to settings that don't seem to exist on my devices.

In the iPhone Mirroring app on my Mac, it still tries to connect to my previous phone. I go to iPhone Mirroring Settings, but it doesn't give me an option to switch or add an iPhone. It only gives me the options to "Require Mac login to access iPhone" and (though it won't let me click it) "Revoke iPhone Access..."

In my Mac's Desktop & Dock settings, I go to the Widgets section. It gives me an on/off option for "iPhone Widgets," but there is no option of which iPhone.

On my iPhone, I go to the "AirPlay & Continuity" settings, but there is nothing on iPhone Mirroring there.

Am I going crazy? All of the tips I've found online don't seem to apply to my devices. Is this happening to anyone else? Has anyone else figured out a solution?

I was looking again after I got to work about this, and found this other Apple support document for iPhone Mirroring. I think this must be what happened to me when it came to having to change phones. iPhone Mirroring: Use your iPhone from your Mac - Apple Support

Read the part about choosing the phone to use with the Mac. Make sure the iPhone is signed in with the same Apple Account (ID) as the Mac.

Does the current iPhone have the same name as the old one? I had troubles with mine once and I can't remember what I did. Before I tried to connect to my new iPhone I had changed the name of the new phone and at that point I believe it prompted me about using the new phone, or it asked me if I wanted to delete the old one. I'm trying to see if I can find a setting and I cannot find where I was originally, but then that was before Tahoe.
