I've seen many threads on this and I do not have the options mentioned in any of them. Can someone please tell me how to set excel as the default for spreadsheets instead of numbers? Other threads have mentioned right click>open with>excel>set as default and I do not have any sort of set as default option

Right click on an XLSX file in Finder and choose "Get Info". In the window that pops up will be "open with". Choose Excel as the app. Click on "Change All". Do the same thing for an XLS file and a CSV file, if you have any.

In Finder, right-click any Excel file and choose Get Info. In the window that opens go to the "Open with:" section, choose Excel and click the button "Change All".
