What is pocketnews doing in my Sim applications?

If you are referring to the options found in Settings ➜ Cellular ➜ SIM Applications, they are added by your carrier for your service. They are usually SMS based options that offer info or other features through messages.
You can ask your carrier why they included that option there.
What are SIM Applications? Your SIM is what connects you to cellular. SIMs don't have applications, so where are you seeing this pocketnews?
I looked it up and Pocket News can be associated with YouTube as you likely saw and Pocket News provides brief, easy-to-read news updates and saves readers time. It covers politics, sports, entertainment, business, and technology.
It's not a SIM Application as I explained above that SIM refers to your SIM Card, which is how you get cellular service from your Carrier.
There's nothing nefarious about Pocket News and it isn't something I'd be concerned about.

Pocketnews is something I’m very sure I never loaded but its on its own in here somewhere.
I am an 80 yr old somewhat not brilliant user of a top end phone that is new to me
came to it following a youtube piece about invasive settings on phones. Another way of putting the page is that
pocketnews was there on the sim & the only way forward was to advise apple
