A. Turn Off Dark Mode:

1. Go to: Settings
2. Tap: Display & Brightness
3. Select: Light

B. Restore From a Backup:

Did you ever create a backup of your iPhone prior to this issues installed? If so, restore this iPhone from it. If not, then take this as a learning experience, knowing to always to create a backup, both prior to and after making any major changes to it (i.e. update installs), whatsoever.

C. Update your iPhone:

I see that iOS18 is installed on your iPhone So, look into installing the most-recent update: OS26.1. Other than updating directly through the iPhone, itself, you can do so through use of a computer, or trough Cellular.

IMPORTANT: you have an option to update, however, then be certain you backup your iPhone first. That way, you will have something to restore your iPhone from should anything go wrong with the update
