Deleting game center data in iCloud
I want to date data about a game that is in the cloud and start over but see no way to do it.

Go to Settings → your name → iCloud → Apps Using iCloud → Show All → Manage Data. Find the game in the list and delete its stored data, then delete and reinstall the app. This resets progress for games that save to iCloud. If the game doesn’t appear in iCloud, then it stores progress on the developer’s servers and must be reset inside the game instead.
