I just installed ios 26.2 on my iPhone only to discover that the camera "upgrade" removed a bunch of features of the old one. Is there a way I can get the old camera app on my iPhone instead?

The features have no been removed, but the appearance of the app has been streamlined (simplified). If you press and hold where it says Photo or Video at the bottom, then drag/slide your finger left and right, you’ll see the custom modes you are familiar with.

No, downgrading iOS is not supported. What is missing?
Is anyone else experiencing this on iOS 26.2? I’m using an iPhone 16 Pro Max and noticed the camera tone isn’t stable HDR feels too aggressive, highlights get overexposed, and shadows (especially hair and indoor scenes) look too dark. The same scenes looked more balanced on iOS 26.1. Curious if others are seeing the same behavior.

Nope.
Engineers are always tweaking the software and firmware to achieve a better overall look to the images produced. This is true of the big camera manufacturers like Nikon, Canon, Sony, Leica and others. Color science is a science, but human perception is a huge variable, especially in devices intended for consumers.
